My take on a cream based soup

So this is our start to soup season. A creamy soup without the cream. I boiled the meat first with all the spices, honestly this can seasoned how you like. After I remove the meat and add in my potatoes, onions and carrots. Once the potatoes, onions and carrots are soft, I add to a blender and get this to a creamy consistency. Take as much of the meat off the bone as possible and add back in. I will now add the creamed veggies to the soup, allow to simmer just a bit and you are done. I did add in some navy beans just because we have so many bags I’ve been trying to use all these up as much as possible. This had great flavor and a great consistency, nice and creamy without the added calories.


Love having you in our kitchen, today Enchiladas Rojos

If you haven’t noticed by now we eat a lot of Chicken. My husband gave up eating beef a few years ago, so I just started cooking what he could eat. I didn’t feel like making separate meals. This time around we had Enchiladas Rojos. And as always, fresh homemade corn tortillas. Preparing the chicken first by boiling and adding in some chicken bullion for added flavor. I set that aside to cool so I can shred later. Next I move on to making my tortillas. Once the tortillas are ready I shred the chicken, I will sauté slightly with spices of choice and added in some yellow onion for a crunch bite. Take the chicken and roll into my tortillas. I warm up my red sauce in my cast iron skillet add more onions and lots of garlic, we love all the garlic, then place the rolled tortillas in the skillet to warm up and mingle with the sauce. I do not have an oven, so I usually make sure they all get coated well then loosely cover with some foil to get everything heated up. Once everything is nice and hot, I added on some queso fresco, more onions and of course lettuce, tomato and yogurt. My husband loves spicy so he always adds more hot sauce to his batch. I love cooking these types of meals and this will usually be the only heavy meal we have for the day. If we get hungry or want a snack it’s usually fruits or veggies or my husband love trail mix. So I try my best to make this a very hearty and as healthy as possible meal.

LAMB VEGGIES N BROWN RICE

This was a great meal for our week. This had ground lamb, spinach, onion, and portabella mushrooms. I first ground and seasoned the lamb and drained some of the fat. I rough chopped the mushroom and onions and sautéed for a bit. I then added the spinach and let that cook down and added the lamb back in. I already had some brown rice made that went very well with this dish. This is a great meal prep dish that can be made in bulk for the week.

A new menu item has proven to be a favorite. This will soon become a treat for us. I am aggressively starting a new workout program and fry anything is not on the menu at all. But for now, this was a really good meal. Easy to prepare and very delicious. Fry bread basically starts out like you would if you are preparing tortillas. Same ingredients, flour, salt, baking powder and water. I don’t really follow measurements, my husband always says the ancestors will let you know when it is right. Once everything is mixed together roll out the dough into a few balls and roll out or flatten with your hand. I do by hand for me it is much easier. Have a pan with some hot oil ready to go and drop in the dough once formed. Fry until golden brown and place on napkin or some sort of paper to absorb any of the oil from cooking.

I prepared by chicken as usually, boiled and seasoned. Shredded the chicken after it cooled slightly and seasoned and added to a pan to fry slightly and added in some squash and onions. Once ready served on top the fry bread added lettuce, tomato, avocado, yogurt and cheese. I did not make salsa this time around but had some hot sauce in the fridge which complimented everything well.

SALSA VERDE PICADILLO

A little twist on the traditional picadillo, I used chicken. Of course, we had potatoes, onions and fideo for the side.
Chicken was prepped with salt, tons of garlic, pepper and threw in some white onion while everything cooked. I prepared my salsa verde with tomatillos, serrano peppers, onions and garlic. Boiled the tomatillos and serranos, added all to a blender. Made sure everything blended well and added salt to taste. Fideo or vermicelli noodles were fried to a golden brown and added tomato sauce, garlic, salt, chicken bouillon and water. Left to boil for a few minutes until fideo was tender and soupy. I love a more soupy sopa LOL, and it all came out great.

BISON BURGERS

These burgers were a for sure treat for us. My husband does not eat beef, so yes this was a great idea!

These were prepared with garlic, chopped onions, salt, pepper, dried red peppers, purple basil and rosemary. I also made some tortilla chips and Pico de Gallo. Added to the burgers, I grilled some baby portabellas and dropped in some swiss cheese. Everything was a great alternative to beef burgers.

Burgers were garnished with tomatoe, lettuce, cucumbers and of course, mayo and mustard.

This was another great meal for our recipe book. Chicken and squash with homemade tortillas was a hit with my hubby. Our chicken was boiled with salt, pepper, and lots of garlic. Set a side to cool and shredded getting ready for the next process. The small green squash was chopped up in large chunks and added to my shredded chicken. Yellow onions were also added in with plenty of spices, salt, pepper, garlic and some serrano peppers for a kick. This was served with Mexican rice and some tortillas. This meal did not take long to prepare and serve. We are keeping this for our on the road meals. Let me know if you have any ideas for quick and easy on the road meals.
