We have been gifted a garden

Last year we tried to start a garden but it didn’t take very well. This year around February we started again and planted so much almost to crowding of the garden. We did this to hopefully try to get something growing. Well, things did take, and we have a great garden. It has already yielded several vegetables, several varieties of squash, okra, green leafy vegetables. But the one surprise was the garden in front of our camp. Our garden that we planted is in the back of the barn, but we now have squash and cantaloupe everywhere in the front. We are not sure how all this came about but figure animals may have moved seeds from our compost pile and they dropped in this area and took. Our front area of the camp is just covered everywhere with green vegetation. It is so beautiful and we are truly grateful for the food. So many great meals will be had with what we have been gifted.

What are you doing?

Living life on the road can be a challenge when you are trying to stay healthy. It’s even harder when you live full time on the road. The convivences you have in a house are not the same as on the road. You do not have a full size pantry, you do not have a full size double door refrigerator and and you do not have a freezer. There are many temptations to just eat fast food or cook a quick easy fattening meal. So the trick is to plan and prepare just as you would at home, but on a slightly smaller scale. I have been fortunate enough to be on the road for the past year and a half but, at the same time, we have been stationary. (Found a great gig to get us started) So we do have a freezer and we do have an apartment size fridge for now. Once we get on the road we will not be able to utilize both of these items, so I have been planning and thinking over my meals. I need to figure out which meals work for us and which ones will be for special times. Some meals require little prep work and some are a task. We like beans of any kind, pinto, navy, red, and lentils, rice and things like this. Which are great for the road since these can yield and abundance of food and adding protein can make these a great one pot meal. These will also freeze well. Protein is the issue here. It will be a challenge to get protein on a very low budget and to keep it frozen for longer storage periods on the road. So I am putting together a plan on what items will be staples and which will be removed from our meal plan. Keep up with us as we move through our journey and stay healthy on the road.
